Camas got in touch and later sent me Ethan's pate handout, which I'd misplaced, a repeat of her duck insights, and a really delightful write up of making a big batch. That last one still has me laughing. She routed her response into email - that made sense as she was replacing class handouts. Today another person responded, recommending the recipe of one of my go-to cooks, J Child.
Thanx to everyone that responded to my question. It really is nice when one is mentally over complicating the problem and someone pops up with some simple solution. Best advice was to put it in a container with frozen ice bags and let it sit there for three days and check how it went. At worst I will have some thawed meat to eat.
